[Stk] startBlowing methods

I don't think outputGain_ is getting initialized. You should use the noteOn
and noteOff methods instead or look to see how they function.  Also,
there's a often a vast range of inputs that won't get any usable sound out
of physical models.  Look at any demos or experiment with different ranges
to find the sweetspot.
